Chocolate Cake! | Paleo, Gluten Free, Dairy Free



Welcome back! It's been a while! :) 

Soooooo I found a recipe online for the most delicious looking chocolate squares, but I had none of the same ingredients so I SCAVENGED THE PANTRY, used what I had, and whipped up these bad boys that just so happen to also be... you guessed it, delicious. I was expecting them to come out uncooked, flat, and gross, but hey - sometimes you surprise yourself! 

I've been eating a piece every night for dessert with a cup of oat milk or a little bit of vegan vanilla ice cream and let. me. tell. you - it's so good. In the picture, there's a little bit of Reddi-Whip coconut milk whipped cream on the top, which is also a 10/10.

Ok, I know your belly's probably grumbling already, so HERE'S THE RECIPE!!!

1/2 cup coconut flour
1/2 cup cacao powder
1 tbsp (decaf) instant coffee
2 tsp baking soda
pinch of salt
1/3 cup coconut oil
2 tbsp cashew butter
(I made my own in a food processor w/ cashews + coconut oil)
1 tbsp vanilla extract
1/2 cup oat milk
2 tbsp coconut sugar
2 eggs
2 ripe bananas

COMBINE coconut flour, cacao powder, instant coffee, baking soda, and salt in a bowl.
COMBINE coconut oil, cashew butter, vanilla extract, oat milk, coconut sugar, eggs, and bananas in a separate bowl. 
MIX together until well-combined.
BAKE 30 min at 350 degrees in 8x8 pan lined with parchment paper.
