Banana Bread - With Real, Whole Foods

Hellloooooo!! Life these past few weeks has been a whirlwind of so many things; studying for finals (still not done yet. unfortunately.), graduation parties, field hockey practices, reading new books, opening the pool, end-of-year projects, and getting my first bit of a tan (woohoo!). The end of the school year is always so busy and, as hard as it is, I try my best not to wish it away.

Finals start Friday... and if you know me, you know that I'm an absolute stress ball. I mean, would I really be Meg without stressing over school? Hopefully, I'll be able to update you next week saying that I made it and that they were all a breeze. Hopefully.

I'm headed to Connecticut with my mom this weekend for a field hockey tournament, so I'm hoping I'll get to explore a little bit and find some yummy food in between games!

On the subject of good food, I PERFECTED MY BANANA BREAD RECIPE!!!!

I had created and tried out three different recipes, but none of them seemed to work. I guess Friday was a magical day because this tastes so good. I'm sure you want me to stop rambling and just give you the recipe already, so here you go! Enjoy!

☆  BANANA BREAD  ☆

Wet ingredients:

2 mashed bananas (VERY RIPE!!)

2 eggs

3 tbsp melted coconut oil

4 tbsp organic honey

1 tsp vanilla

Dry ingredients:

1 cup super finely ground almond flour

1/2 cup coconut flour

Enjoy Life vegan chocolate chips (as many as you please!)

1 tsp baking powder

Cook in a loaf pan covered w/ parchment paper in the oven at 350.

I cooked mine for 55 minutes, but I think it depends on the oven - check consistently after 35 minutes of baking.
